The dinner is paired with premium wines selected by a "sommelier" (n. sŭm'əl-yā', sô'mə-lyā' - a trained & knowledgeable wine professional) or winery owner and/or winemaker. Each course will include a 3 ounce pour of wine and iced lemon water.

Gourmet Hors d' Oeuvres'

Gourmet Hors d' Oeuvres' are served as six individual mini-courses with wine recommendations.
Following are the prices (50% deposit to hold a reservation on any event.):

Gourmet Five Course Wine Pairing Dinner
Appetizers:
1. Black Tiger Prawns coated with coconut panko breading served atop mango Chardonnay salsa.
2. Fresh Rock Shrimp and Smoked Salmon cakes. with avocado and port wine-reduced red onions accompanied by chipotle sour cream.
3. Prawns and mozzarella cheese wrapped in tender calamari steal sautéed in white wine citrus cream sauce.
4. Baby Lobster Tails Wrapped with Smoked Apple Bacon and roasted Chile served atop a bed of arugula leaves with red onions tossed with annatto hot turkey bacon dressing.
5. Portobello Mushroom Three-Cheese Napoleon baked to perfection. Served with a white wine sauce.
Soups
1. Roasted Butternut Squash infused with roasted corn then sprinkled with roasted peppers and laced with sour cream.
2. Cream of Portobello mushroom.
3. Roasted Eggplant garlic soup.
4. Garden Tomato soup with cumin and spaghetti squash.
5. Suppa di Mare - assortment of clams, mussels, scallops, salmon and halibut cooked in a white wine and garlic broth with fresh herbs. Garnished with parmesan crostini.
